Last year I was diagnosed with an auto-immune condition called Hashimoto’s disease. It set me on the path of healing my body through nutrition. It has been a long journey and I’ve learnt so much along the way to a more healthy body and mind. Many of you have asked about what kinds of foods I eat and so I wanted to share this little food diary with you. Let me preface this by saying that I eat according to my Dosha which is an Ayervedic term for your body-mind type. You can find out what your dosha is here.
I like to start my day with some warming ginger tea to get my digestive fire geared up. People who are Kapha types tend to have a slow and sluggish digestion so spiced warm tea is great to get things moving. I love sautéed pears or this sautéed apples recipe topped with home made granola or paired with ginger, pear and turmeric coconut bread. It tastes like I’m having dessert for breakfast but it’s all natural, full of vitamins and minerals and very warming for the Kapha dosha.
I make this the biggest meal of the day and it includes basmati rice or quinoa, steamed chard, beets and carrots topped off with my special west Indian inspired Kapha gravy. Remember that you should include a grain and a bean into your meals so that you are getting a complete protein if you are vegetarian or vegan. I make sure that I include a bean in my lunch or dinner so I may add lentils to my rice or adzuki beans, which are one of the most nourishing beans out there. My go to drink is an amazing nutritional juice that is very building for the body.
For dinner I will either have some pea and zucchini soup topped with a pesto or some some of my home cooked curried lentil dahl with some stir fried garlicky tuscan kale. I like to sip on this special gut healing tea that is great for digestion throughout the day and I usually finish this off with my evening meal.
